Way back in my early years I owned a couple of ice cream parlours in Tampa and Ft.Lauderdale called Larry's Ice Cream. Outstanding homemade ice cream made in batches and delivered twice a week. I developed some very special baked goods that would accompany that ice cream. One of the most popular was the Chocolate Mania Cake warmed with vanilla bean ice cream and whipped cream. Wow!!
This weekend we had a great group of guests from all over the place. Our Chattanooga guests walked into the house, never met them, and said I'm waiting for my Choco Mania Cake. Okay you've got it! So the next morning there they had it and totally devoured it. This is after a full breakfast! Nothing like real whipped cream to have as a topping, that actually slides off because it's so warm. I'm willing to share this recipe with you and it is outstanding!
1 cup sugar
3 ounces baking chocolate, melted
1/4 cup flour
3 eggs, beaten
1 teaspoon vanilla
Cream the butter and sugar. Add the chocolate, eggs and vanilla, Blend well and the add the flour.Fold in till blended. Bake at 325 degrees for 25-30 minutes. Let cool for 10 minutes and then serve. You can also cover it for the next day and heat it in the microwave for 20 seconds and then serve with vanilla ice cream and the whipped cream. Mmmm.
