Brownies On Steroids At Andon-Reid Inn

One of the most requested recipes at Andon-Reid Inn is our "Brownies On Steroids". That's right...that's the name it was given. I put them out in the afternoon and they're gone before dinner. I found this recipe years ago and was drawn to it by the name.Of course given my background as a Personal Trainer anything with the word steroids arouses my curiosity.I must say that these brownies certainly merit this label. I have tweaked the recipe to my liking and they are pretty amazing. Let me know what you think about these sweet chocolate morsels. Better yet, when you travel to the Great Smoky Mountains in North Carolina stay with us and request this delectable treat upon your arrival, like so many of our guests do!

Brownies On Steroids
1 3/4 cup all purpose flour
3/4 cup confectioners' sugar
1/3 cup baking cocoa
3/4 cup cold butter
14 ounce can sweetened condensed milk
1 teaspoon vanilla
2 cups semi-sweet chocolate chips, divided
1 cup coarsely chopped toasted pecans
1/2 cup coconut
1/3 cup English toffee bits

In a food processor combine the flour, sugar and cocoa. Add the butter and process just until mixture resembles coarse crumbs. Press firmly into a greased 13" by 9" baking pan. Bake @ 350 degrees for 10 minutes.

While crust is baking, combine condensed milk,vanilla and 1 cup of chocolate chips in a medium saucepan. Heat, stirring constantly, until mixture is smooth. Remove crust from oven and pour chocolate mixture over crust. Sprinkle with coconut, nuts and toffee bits and remaining chocolate chips. Press down firmly Return to oven and bake for another 18-20 minutes.

Lake Junaluska Walking the Trails

I am so enjoying the magnificent summer we have been having in Waynesville, NC. The air, mountains, lakes and nature sounds have all contributed to this overall good feeling. More than ever I really like taking walks. Everyone who knows me can't believe I'm out walking. I exercise alot but my form of exercise is jogging, Stairmaster, Stepmill and heavy duty weights. Yes, I know, more of an "AAA" type personality. I guess, living in the mountains of Western North Carolina has made me slow down to only a type "A". I've been walking at Lake Junaluska, a beautiful 3.8 mile loop around the lake. It's very convenient and only 10 minutes from Andon-Reid Inn. The serene environment and the smells of all the roses on the Rose Walk has contributed to my tranquility. I notice I feel more creative and refreshed after that time for myself. Of course I have still have my goals thanks to my "A" personality, and that is to be able to jog the loop in a couple of weeks BUT look at all the surroundings and "smell the roses"while I'm jogging.

50th Anniversary Celebration At Andon-Reid Inn

Ron and I have been so fortunate to meet outstanding guests at our bed and breakfast. The families we meet are all so special. The O'Neal/Renegar/East family is just that! Jim and Joanne decided that they wanted to spend their 50th wedding anniversary at our Inn with their children. What an honor. The first night Allyson, Mike, Terri and Gregg decided to take their parents to the Grove Park Inn for the award winning seafood buffet. They all came back with big smiles and full bellies. But it was the second night that had all the sentimental touches that brought back memories of their childhood. The story goes that whenever they took their yearly family trip to Florida, Joanne and Jim had to stop just at the border and have a picnic. This became a ritual. That's just what we did here. We set up a picnic in our back yard around our firepit, surrounded by the mountains and had a fantastic BBQ. Friend and Chef, Jackie Blevins catered a wonderful dinner filled with shrimp, ribs, chicken, homemade potato sald, coleslaw and heirloom tomato salad, straight from her garden. What a feast! There was lots of picture taking, laughter, stories, catching fireflies and more memories to be had.Joanne and Jim...you should be very proud of your 50 years together and the beautiful family you have created.

This is what Innkeeping is all about.

French Toast Recipe Andon-Reid Inn Bed and Breakfast

This morning everyone wanted the recipe for my Banana Almond French Toast. It's a great overnight recipe. It came to me via my mom. How many times do you go to an appointment and are waiting to be seen by a doctor or hairdresser, pick up a magazine, start reading, see a recipe you must have, turn to the page and it's been ripped out. Yep...that's my mom, the phantom ripper. She tore it out while waiting in a doctor's office and mailed it to me. Needless to say, I have made this recipe so often at Andon-Reid Inn, and have gotten such rave reviews, that I'm secretly happy that mom did this for me. Let me share the recipe with all of you so I don't feel guilty about the missing recipe. May I personally thank Dr. Thomas for his donation!

6 Tbs. butter
1 1/2 cups packed brown sugar
3 large ripe bananas cut diagonally into 3/4 inch slices
1 long loaf of French bread
6 large eggs
2 cups milk
2 teaspoons vanilla
1 teaspoon of cinnamon
1/2 cup sliced almonds

1. Melt butter in microwave and stir in sugar until moistened. Spread sugar mixture onto bottom of 13x9x2 glass baking dish. Spread bananas over sugar; top with bread slices, cut sides down.
2. In medium bowl, whisk together eggs, milk, vanilla and cinnamon. Slowly pour mixture over bread and sprinkle with nuts. Cover with plastic wrap and refrigerate overnight.
3. Preheat oven to 350 degrees. Remove plastic from baking dish. Bake uncovered, 45-50 minutes or until bread is golden brown. Let stand for 10 minutes before serving.

Asheville Dining Mediterranean Style

Last night Ron and I had the pleasure of meeting our Florida friends for dinner in Asheville. Andon-Reid Inn is only 30 minutes away. What a beautiful drive through the mountains. Since our friends are the "tourists" we thought we would let them choose where to dine in this lovely city. Lucky for us they chose Enoteca at Biltmore Village. What a wonderful place to eat. It's a very relaxing setting with a hand selected wine list and Mediterranean foods prepared in a simple way.Our first order of business was to select a wine. Red was the color of choice and we had a delightful VALPOLICELLA CLASSICO SUPERIORE. The menu is very innovative and refreshing. We all started with the "Create Your Own Antipasto". You can choose either 1,3,5,or 8 selections from a huge list of cheeses, hard cured meats,seafood and vegetables, olives and dips. You better like to share when you order one of these. Their Caesar salad was wood grilled and out of this world.The entrees we ordered were cooked to perfection. The mussels they served had chorizo in the sauce, the pacific halibut was served as a bouillabaise, and the grilled skirt steak was served with goat cheese mashed potatoes.Was there room for dessert? Of course, there's always room for Dark Chocolate Ganache Torte with Cranberry Sorbet, and a Red Wine Reduction. Couldn't think of a better way to spend time with good friends over amazing food and pleasing ambience!

Business Travelers at Andon-Reid Inn

I recently read a great article about business travelers and what they need, from an industry magazine. Basically, they were talking about blogging and how the different subjects we decide to post about can build meaningful relationships with our guests and potential guests. Business travelers need to be on top of their game.
