Fresh Peach Recipe From Andon-Reid Inn Bed and Breakfast

 This year the fresh peaches have been amazingly sweet, so naturally we've been whipping up some great recipes from our Waynesville NC bed and breakfast. One of the favorites has been the poached peaches with a cheesecake like filling. I use it as our fruit course but it can definitely be a dessert.

Poached Peaches with Lemon Cheese Mousse
Every breakfast starts off with fresh fruit. This is a refreshing start for any day. 
Serves 12

3 cups water
1 ½ cups sugar
1/3  cup lemon juice
1 tablespoon vanilla
6 medium peaches, halved and pitted
Fresh raspberries

Combine first 4 ingredients in large glass bowl. Microwave on high for 10 minutes. Stir until sugar dissolves. Add peach halves to syrup and microwave on high for 4 minutes. Refrigerate covered overnight.

1/2 cup ricotta cheese
1/4 cup cream cheese
3 tablespoons confectioners’ sugar
1 1/2 teaspoons lemon rind
1/2 teaspoon vanilla

Beat all ingredients together, cover and refrigerate.
When ready to serve, place peach halves on serving plate cut side up. Spoon mousse into pit cavity and sprinkle with nutmeg. Place a couple of fresh raspberries on each plate.
