Events At Maggie Valley Festival Grounds, Maggie Valley Country Club

There are 2 charitable events going on this coming weekend, one at the Maggie Valley Festival Grounds and the other at the Maggie Valley Country Club. Both are for great causes.

Plottfest Logo

The first is called Plottfest which is to benefit Head Start  of Haywood County. It starts out with a pre-event kickoff VIP Party on Friday, April 20th from 6PM-9PM held at Apple Hill Farms, the former Plott family farm. There will be beer, wine, heavy hors d'oeuvres and live music. Tickets are $50 in which all proceeds go to Headstart. The next day there will be the Great Smoky Mountain Trout & Heritage Festival. It's all about the aquatic ecology, fishing ethics, water safety and education in the area of natural resources. There are 2 FREE CATCH youth fishing clinics limited to children ages 6-15. Then there is the Trout Race. That's something you have to see for yourself. Click here to purchase tickets.

Of course the next event is after my own heart...The Taste of Chocolate to benefit the Haywood County Volunteer Center. This will be my 6th year entering this fun competition. It will be held Saturday, April 21 at the Maggie Valley Club from 6PM-9PM. There will be Ray Lyon at the piano, silent auction and plenty of chocolate.

Easy Spring Recipes From Andon-Reid Inn, April 2012

Ham asparagus stata on plate served at Andon-Reid Inn

At our Waynesville bed and breakfast I've been pulling out all of the Spring recipes for our scrumptious North Carolina breakfasts each morning. Enjoy the mellow spring flavors of ham, asparagus, swiss cheese with a hint of fresh rosemary.

Ham Asparagus Strata
A wonderful do ahead recipe that can be made the night before and baked first thing in the morning. Light and fluffy, this strata is totally devoured.

4 English Muffins, torn or cut into bite-size pieces (4cups)
2 cups cubed, cooked ham
2 cups freshly steamed, cut up asparagus
4 oz. shredded Swiss cheese
1 teaspoon fresh chopped rosemary
4 eggs, beaten
¼ cup sour cream
1 1/4 cups milk
2 Tbl. finely chopped onion
1 Tbl Dijon style mustard

In a greased 2 quart square baking dish spread half the muffin pieces. Top with ham, asparagus and cheese. Top with remaining muffin pieces.

In a bowl whisk together eggs and sour cream. Stir in the milk, onion, fresh rosemary, mustard and 1/8 teas pepper. Pour over layers in dish. Cover and chill overnight.

Bake, uncovered in 325 degree oven 60-65 minutes. Let stand for 5 minutes and serve.

I usually put Hollandaise Sauce over it. I make my sauce from scratch but Knorr makes a good Hollandaise.

You can find this recipe and many more in our very own Andon-Reid Inn Bed and Breakfast recipe book. Feel free to email us or give us a call and we will be more than happy to mail one out for you. Better yet...come stay with us and pick one up right out of our gift shop.

Eco-Tours,Cataloochee Valley, Andon-Reid Inn Bed and Breakfast

Elk in Cataloochee

The other day I had a visitor by the name of Esther stop by and tell me about her two year old company called Cataloochee Valley Tours that does Eco-tours . How cool is that? Our Waynesville bed and breakfast is only minutes away from the Smokies and this would be great for our guests!

Cataloochee Valley Tours have several guided tours to choose from. I am going to guess that the most popular one is the Evening Elk Eco-tour. You will learn about the early settlers of Cataloochee Valley plus see the herds of elk in the area and enjoy a short hike. The tour lasts 4 hours, costs only $40 per person and you get picked up right here at our Smoky mountain bed and breakfast.

In April and May they have a morning Spring birding and wildflower hike where you can enjoy early morning elk viewing, a nice 2 mile hike and discover some wildflowers and birds.

The Synchronous Firefly night walk sounds amazing. There is a secret location you are brought to, to witness this wonder of nature.

All Eco-tours include
  • Round trip transportation
  • Snack and drink
  • Fully guided tour with a Certified Master Naturalist

The 2012 tour schedule can be found here. They are officially authorized by the National Park Service to operate hiking guide services and guided tours within the Great Smoky Mountains National Park. Ron and I would be more than happy to schedule a tour for you!
